Today we are going to prepare a recipe that attracts all kinds of audiences: the pizza recipe with black truffle. Following as a base the elaboration of a dough in the classic Neapolitan style, we are going to substitute the mozarella for the burrata. This change is due to the fact that not long ago we have seen how in an Italian food place in Madrid called Anema e Core, they used the burrata for more than salads.

We have already told you about the burrata, visually it resembles a mozarella ball, but in relation to the palps you realize that the ball is much slower, its interior is much more liquid and it spills with simplicity presenting a curdled and fibrous texture, like a cold cream. Don’t be impatient to break it up with your hands and spread it close to the entire pizza base.

At this moment we are in truffle season, so it is the perfect stage to prepare this recipe. As with mushrooms, there are currently well over hundreds of truffle species known on the planet, of which only dozens of the TUBER group have been found in Europe. Only a few are edible and gastronomically appreciated.

How could it be less, we have chosen the Vegafría black truffle to accompany this pizza, whose taste is exclusive and its harvesting stage runs from November to March.


  1. We put the flour and salt in the Thermomix glass. We dissolve the yeast in warm water and gradually add it to the glass and program 2 minutes, closed glass, spike speed.
    2.If it is too sticky, we repeat the same operation with a little more flour. We make a ball and let it rest covered with a cloth for 5 minutes.
    3.Remove from the cloth and knead until it forms a ball. Sprinkle a little flour on a kitchen cloth, place the dough on top and cover with a damp cloth. We let it sit in a warm place for about 30 minutes.
    4. Place the tomatoes in a bowl, mash them with a fork, season and mix everything well.
    5. Sprinkle flour on the work surface and spread the dough in a circle of about 35 -40 cm in diameter until it is thin, and leaving the edge a little thicker.
    6. Sprinkle a few bread crumbs on the baking sheet, place the pizza base and reserve.
    7. We clean the boletus, cut them and reserve them.
    8.Spread the tomato evenly, drizzle with olive oil, sprinkle with Parmesan, oregano, add the burrata, boletus, salt and pepper. We put it in the oven for about 20 minutes at 180º, remove it, add a few tablespoons of truffle paste, laminate some slices of Black Truffle and ready to serve.
